The Department of Animal Science at the University of Wyoming is seeking candidates for the position of Assistant Professor of Meat Science. This 11-month tenure track position will have a majority research appointment, with teaching responsibilities approximately equivalent to two courses per year, and modest service and extension responsibilities to include mentoring of undergraduate students, contributing to departmental and college committees, and responding to meat industry stakeholder matters. An earned doctorate in Meat Science or closely related field, as well as ability or strong interest in teaching Meat Science and related courses at the graduate and/or undergraduate levels will be required. Excellent oral and written communication skills will be necessary. Preference will be given to applicants with referenced evidence of training and instruction in Meat Science that attest to applicants’ ability to establish an independent program in Meat Science research and teaching.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
The successful candidate will be expected to establish an externally funded program in Meat Science research that could include improved production, harvest, quality, safety, and/or processing of beef, lamb, and/or pork. Experience or a working knowledge of meat laboratory operations will be preferred. The position will complement the Department’s food microbiology and muscle biology research. Efforts to enhance the Department’s other research focus areas of ruminant nutrition, reproductive physiology, and genetics will be encouraged. Additional opportunities for collaboration exist with the Microbiology and Family Consumer Science Departments, as well as the University’s Molecular and Cellular Life Sciences and Biomedical Sciences Interdisciplinary Programs. Expanding relationships with industry will be encouraged. Teaching responsibilities will include the undergraduate course in Meat Science (FDSC 3060, Principles of Meat Science), as well as other courses consistent with the successful candidate’s expertise/interests and needs of the Department. Preference will be given to applicants who plan to develop a dynamic graduate training program. Facilities available within the Animal Science Department to support research and teaching endeavors consist of a modern, well-equipped meat laboratory that includes abattoir, fabrication, processing, and retail counter, as well as a nine-stall taste panel room with adjacent food preparation kitchen. A full-time meats laboratory manager is employed by the Animal Science Department; supervision of the manager will be the responsibility of the successful candidate. Laramie is near the epicenter of major meat industry processing infrastructures. Research laboratory space and analytical instrumentation along with technical support provided by Departmental research staff accompany this position. The Animal Science Department supports a successful Meats Judging program. Excellent livestock facilities are provided by the Laramie Research and Extension Center and is located approximately 5 miles from campus. Group feeding facilities and a Grow Safe system for individual intake data collection with sheep and cattle are available. These facilities also include a multipurpose research unit equipped with metabolism and surgery facilities to support intensive research investigations.
The position is available July 1, 2019.
Assistant professors shall normally hold the terminal qualification in their discipline (e.g., Ph.D., Ed.D., MFA, etc.), and shall have demonstrated ability, through appropriate experience, to perform the functions of the position they are to hold.

Evidence of plans or ability to pursue research in the focus areas of beef, lamb, and (or) pork with emphasis on fresh meat and/or processed meat Meat Science teaching experience Interest in collaborating with existing faculty in related focus areas within the Animal Science Department, which can include: muscle biology; food microbiology; lipid metabolism; genetics; physiology, and ruminant nutrition Plans to seek extramural funding to support research and graduate training Working knowledge and experience with meat laboratory operations such as slaughter procedures for cattle, sheep, hogs, and other livestock species, carcass fabrication, and meat processing Plan to develop a dynamic graduate training program Ability in oral communication Ability in written communication Strength in recommendations Industry relationships and associations that could be avenues for research funding and graduate student training opportunities Evidence of supervisory experience or potential
